From the Michelin Guide: "Nestled in a tiny Virginia town on the edge of Shenandoah National Park about 70 miles from the nation's capital, The Inn at Little Washington has long been the domain of Chef Patrick O'Connell and a destination in itself. The remote establishment began life as a garage built in the late 1890's, and has evolved since opening in 1978 into a culinary campus with guestrooms, a farmer's market, and shops.This much-lauded Southern getaway was built for celebrating special occasions. More is more when it comes to the dÃ©cor of these dining rooms - tapestries, tasseled silk lampshades, billowing fabrics, and floral patterns produce a riotous sense of opulence. Tables are elegantly set with the chef's personal collection of implements, some of which he has designed himself.Guests choose from three tasting menus highlighting American cuisine often prepared using local product, pulled from the restaurant's own gardens. Chilled veal tongue arrives with pickled vegetables and horseradish and mustard ice cream; while fried soft-shell crabs are sauced with orange and ginger. Essential Job Functions: (Responsibilities include but not limited to)â¢ Demonstrate competent knife skills, basic pastry techniques & knowledge, measuring ingredients, mixing methods, and safe operation of all kitchen equipment.â¢ Plan, prepare, set-up and provide consistent, timely and organized quality service in all areas of pastry production including an emphasis on plating in accordance with standards.â¢ Strictly adhere to recipes and standards for product preparation and plating.â¢ Assist in achieving food and labor costs through monitoring inefficiencies and waste.â¢ Complete opening and/or closing checklists for each shift.â¢ Assist in achieving food and labor costs through monitoring inefficiencies and waste.â¢ Ensure work station mise en place is completed to standards.â¢ Maintain a clean and sanitary work environment according to Virginia State Health regulations.â¢ Strictly adhere to recipes and standards for product preparation and plating.â¢ Prepare ingredients while adhering to Virginia food safety standards.â¢ Work alongside co-workers to further develop culinary skills.â¢ Assist with inventory, receiving and proper storage of product.â¢ Able to lift 40+ pounds.â¢ Ability to multi-task and prioritize in a very fast-paced environment.â¢ Ability to improve through training, direction and criticism.â¢ Work well with other coworkers while displaying a positive and team player attitude.â¢ Excellent communication skills.â¢ Ability to consistently prepare food as requested on the order ticket.â¢ Must use great attention to detail.â¢ Self- Motivated and able to excel under pressure.â¢ Must exemplify Intermediate knowledge in product identification and use.â¢ Use book knowledge in International cuisine and techniques.â¢ Able to kneel, bend, and stand in temperatures up to 90 degrees.

Required Qualifications:â¢ Ability to work flexible hours including evenings, weekends and holidays.â¢ Must have a 4 years professional culinary experience in a fine dining environment.â¢ Experience working in a Michelin starred restaurant preferred but not required. â¢ High School diploma or equivalent.â¢ Culinary degree preferred but not required.â¢ Certification in food safety and sanitation is also preferred.
