Job Summary

We are seeking an experienced and skilled Pastry Chef de Partie (CDP) to join our dynamic kitchen team. The Pastry CDP will be responsible for preparing, baking, and presenting high-quality pastries, viennoiseries, and desserts according to our French bakery standards. You will play a vital role in maintaining consistency, upholding hygiene standards, and contributing to new product development.

Key Responsibilities

• Prepare and bake a wide range of French pastries, viennoiseries, and desserts (e.g., croissants, tarts, eclairs, entremets).
• Assist in daily mise en place and ensure readiness for service.
• Ensure all products meet the bakery's quality, taste, and presentation standards.
• Collaborate with the Head Pastry Chef on new recipe development and seasonal creations.
• Monitor inventory and assist in stock rotation and requisition.
• Maintain strict hygiene, cleanliness, and safety standards in the pastry kitchen.
• Guide and support junior pastry team members when necessary.
• Ensure compliance with food safety and hygiene regulations (HACCP standards).
  
  

Qualifications

• Diploma or certificate in Culinary Arts, Pastry, or a related field from a recognized institution.
• Minimum 3 years of experience in a professional pastry kitchen, ideally in a French bakery or patisserie.
• Proven skills in laminated doughs, choux pastry, custards, and traditional French techniques.
• Strong attention to detail, creativity, and passion for pastry arts.
• Able to work efficiently under pressure and as part of a team.
• Flexible schedule, including weekends and public holidays.
• Basic English communication.
• Preferably domiciled in the Ubud area or willing to relocate.
